Easy to make Corn fritters - Eating with Hunter
My partner had been asking me for ages to make some corn fritters, so today was the day! I doubled this recipe and added a couple of handfuls of grated cheese.
For this recipe you’ll need:
- ½ cup self-raising flour
- 2 eggs
- 350g (12 oz) frozen corn kernels, thawed
- ¼ cup finely sliced spring onion (scallions
- sea salt
- 4 tbsp vegetable oil
Super simple to make using only a few ingredients you probably already have at home. They’re delicious on their own served with sauce, or as part of a meal. Perfect for lunch boxes for the little ones too!
